The University of Alicante (UA) and Biar City Council have formalized the first Valencian Community Gastronomic Intelligence Declaration, an agreement to boost the municipality through culinary research and innovation.

In an event held at the Plenary Hall of Biar City Council, the first Gastronomic Intelligence Declaration of the Valencian Community was formalized. The signing was attended by Antonio Sánchez, Dean of the Faculty of Sciences at UA; M.ª Magdalena Martínez, Mayoress of Biar; Juana Jordá Guijarro, Director of GASTERRA (UA-Dénia Mediterranean Gastronomy Center); and Arantzazu Valdés García, Coordinator of the Degree in Gastronomy and Culinary Arts at the University of Alicante.
With this signature, UA and Biar City Council reaffirm their commitment to Biar's sustainable progress. The agreement is based on research, innovation, and knowledge transfer, establishing a dialogue between the university and the municipality. The initiative invites the participation of entities, companies, and citizens interested in joining this gastronomic and local development project.
This pioneering declaration marks the culmination of the work developed over several years by researchers Rosa Torres Valdés and Covadonga Ordoñez, affiliated with the Faculty of Economic and Business Sciences at UA.
Prior to the signing, the workshop “Narrative and Sensory Analysis of Biar's Culinary Heritage” was held. Organized by the University of Alicante, GASTERRA, and Biar City Council, the event brought together professionals from the agri-food sector, hospitality, tourism accommodation, ceramics, the municipal archive, and local entrepreneurs. The objective was to create a space for idea exchange to identify new collaboration opportunities and projects that highlight Biar's gastronomic identity, thereby boosting its economic and tourist development.
