The presentation took place during the 11th International Conference on Quality and Safety in the Food Production Chain, held in Wrocław. The study, developed by the Institute for Research and Innovation in Agro-food and Agro-environmental (CIAGRO), proposes a comprehensive utilization model based on circular bioeconomy principles for a traditional resource that is often underutilized.
The work includes a multidisciplinary strategy that involves digital characterization of the palm grove using artificial intelligence and the evaluation of 3,000 palm specimens. The goal is to identify varieties with greater commercial and technological potential for obtaining products such as flours, pastes, and juices, as well as ingredients with antioxidant and antimicrobial properties.
In addition to food use, the research explores applications for date by-products in sectors such as cosmetics, construction, and composting. The project, funded by the European Union and the Generalitat Valenciana, seeks to connect local agricultural heritage with technological innovation to improve the sustainability of Elche's resources.
