Bakeries Mi obrador de Confianza and Forn Rial have begun producing the Coca del Poble, a gastronomic creation aiming to become a typical dessert of Paiporta. This initiative blends tradition, innovation, and support for local commerce, stemming from the educational project Challenge Lab ‘Fent Persones’.
The preparation of this dessert, based on traditional pumpkin and almond 'cocas escudellades', was taught to local bakers by Asier Mazórraga and Manuel Bolós, culinary instructors from the IES Guillem d’Alcalà, during a masterclass held at Forn Rial's facilities.
The project, driven by students from the Escola d’Hostaleria of IES Guillem d’Alcalà and IES La Sénia de Paiporta, seeks to unite tradition, memory, and innovation. It also aims to aid the recovery of bakeries affected by the DANA storm and promote local businesses and young talent.
“"The Coca del Poble is an example of how collaboration, creativity, and commitment to our commerce can lead to new opportunities for Paiporta."
The Mayor of Paiporta, Vicent Ciscar, highlighted the importance of such initiatives for economic recovery and reinforcing local identity. Meanwhile, the Councillor for Economy, Employment, and Commerce, José Antonio Redondo, emphasized the crucial role of training and young talent in ensuring the continuity of local businesses.
The promotional campaign, named ‘Nyas, coca!’, includes giving away a promotional apron to customers who purchase the dessert at participating establishments. Chef Jordi Morera, host of the program 'La cuina de Morera' on À Punt, stars in the promotional video to raise awareness for the new product.
