The culinary teams of Saiti and L'Estibador, two prominent city establishments, are collaborating to create a unique gastronomic experience. The menu, titled 'A Story Between Seas,' proposes a culinary journey connecting the Mediterranean with the Atlantic, born from the synergy between Jonathan Santana, chef at L'Estibador, and Vicente Patiño, chef at Saiti.
The event will take place at L'Estibador on July 31st at 7:30 PM. Reservations are now open via the restaurant's website.
The gastronomic offering will begin with a selection of sea bass appetizers, including nori seaweed-cured sashimi, a smoked brioche paté with plum tartare, and a faux matured nigiri.
Following this, five main courses will be served: sea bass ceviche with grilled red sweet potato, crispy corn, and tiger's milk; the marriage of pork and sea bass; sea bass skewer with eggplant ash; Canarian sancocho; and a creamy sea bass risotto with seaweed and sea fennel.
To conclude the dinner, the menu features a pre-dessert paying tribute to Valencian citrus fruits and another creation honoring Tirma, an iconic childhood flavor for Jonathan Santana.
