Professor of Nutrition and Bromatology at UMH, Néstor Vicente Salar, moderated two key roundtables at the 'Nutrition Also Trains' conference, organized by the Official College of Dietitians and Nutritionists of the Valencian Community (CODiNuCoVa) in Valencia.

The conference addressed the importance of nutrition in elite sports. In the first roundtable, titled 'Nutritionists and Technical Staff: Integration Between Professionals,' the benefits of incorporating nutritionists into sports structures and coordination with other professionals to optimize performance and recovery were discussed. Participants included Miguel Górriz, sports nutritionist and founder of Clínica Lebén, and Juanjo Moreno, physiotherapist and physical trainer for Carlos Alcaraz's staff.
The second roundtable, moderated by Professor Vicente Salar, focused on how nutrition has been a key factor in the careers of high-demand athletes. Speakers included wheelchair ultra-trail athlete Inma Boscá, accompanied by her husband and support Toni Ibáñez; professional padel player Tamara Icardo, currently ranked 12th in the world; and Moto2 rider Álex Escrig, a recent podium finisher at the 2026 British Grand Prix.
During the event, the study 'Nutrition Also Trains' was also presented, compiled by CODiNuCoVa from responses from over 240 athletes and around a hundred sports club, team, and federation officials from the Valencian Community. The study reveals a gap between the recognition of sports nutrition's importance (shared by 98.3% of athletes and 100% of officials) and its actual professional presence, with only 11.4% of clubs having an external dietitian-nutritionist and 5.7% having one integrated into their staff. The main obstacle cited by entities is the lack of financial resources (81.7%).
